Fueling this week with a favorite recipe
This beef gnocchi recipe is a favorite in our household. -1 lb lean ground beef -1/2 tsp each of salt & pepper -1 tsp each of paprika & Italian seasoning -1 Tbsp minced garlic -1 15-oz can of fire-roasted diced tomatoes -1 10-oz pack of frozen spinach -1 green pepper, diced -1/2 cup beef broth -3/4 cup heavy cream -1 pack of gnocchi -1 cup shredded Parmesan cheese Brown the ground beef and seasonings. Drain grease and add garlic, tomatoes, pepper, spinach, beef broth, heavy cream, and gnocchi. Bring to a boil, lower heat to medium low; cover & let cook for ~10-15 min (until peppers & gnocchi are soft). Remove lid & top with Parmesan; cook for a few more minutes. Serve & top with additional Parmesan cheese if desired. YUM!
